The Rolle (Vermentino) retains a beautiful pale color with green highlights; the nose offers aromas of fruit (pear and pineapple) joined by notes of white flowers and a touch of honey. Its finish is lively and needs time to soften, its structure still somewhat tentative. It has a potential of 10 years of aging. It will need at least two years to develop its more mineral and complex character.
Its initial vivacity makes it a good match for grilled fish, but its richness and body also lend themselves to a pairing with a citrusy monkfish stew. Later, as its vivacity softens and gives way to a smoother texture and more complex aromas, it can accompany fish in sauce or poultry in cream sauce.
Clarendon Blanc is produced from Gavoty’s oldest vines—in this case, Rolle planted in 1981. This cuvee is blatant in its minerality and multilayered, with fruits verging on the exotic corseted by a palpable sense of appetizing bitterness. Vinified and raised in cement and steel, “Clarendon” Blanc relies on the quality of its fruit rather than any trompe l’oeil of élevage to express its underlying complexity. This is a wine that will blossom in the cellar, and it stands as one of the greatest white wines from Provence we have encountered.
