The Sancerre Blanc is a great fine wine, rich and powerful with a persistent length full of fruits and vegetable aroma(blackcurrant leaf, white flowers, citrus). Ideal as an aperitif, it goes well with starters, seafood, fish. It is tasted very well with goat cheese, Sandre and pike with white butter.
We harvest when the ripeness of the grapes is optimal. The grape harvest is then quickly led to the press where the extraction of the must is done slowly and gently (pneumatic press).The juice is then put in a thermo-regulated vat in order to constantly monitor and control a fermentation at low temperature (14 to 16 degrees). Very long and very sweet, this type of fermentation preserves the maximum aromas.After maturing on fine lees, eachcuvée is assembled with care to obtain an excellent quality and homogeneity of all the production.
