Pale yellow in color with greenish-silver highlights, this wine opens with top notes of apricot, reveals a heart of clementine, and finishes with a citrusy finale.
Recommended pairings: Seafood casserole, salmon quenelle, cheese (Comté, Roquefort).
Alcoholic fermentation with indigenous yeasts at controlled temperatures (18–20 °C), followed by complete malolactic fermentation. Aged on fine lees in stainless steel tanks for 7 to 9 months.
