Crafted from the native kisi variety, fermented and aged in buried clay vessels that encourage natural temperature control and extended skin contact. This ancient technique builds structure, complexity and a distinctive amber hue.

Shumi's work marries deep cultural respect with modern vineyard management, ensuring healthy fruit and balanced ripeness. The resulting wine displays layers of dried apricot, tea leaf, spice and firm tannic grip – hallmarks of artisanal Georgian amber wine.
