A dark caramel nose, flavors not too sweet and not too rich - this is a truly balanced Oloroso. The off-dry oxidative style is softened, highlighting Hidalgo's typical saline house style. Incredibly balanced with notes of figs roasted with brown sugar and toasted almonds.
Faraón is a dry Oloroso made using the traditional oxidative aging system. Palomino Fino grapes are harvested from the prime Balibiana and Miraflores vineyards, naturally fermented, and immediately fortified to 18% so that the yeast never forms. Never forming a veil of yeast means that this oloroso is a slightly less dry style (4-5 grams residual sugar). The solera averages 12 years of age.
Oxidative aging for 30 years produces a dark woody color with aromas of honey, caramel, walnut and hints of bitter chocolate.
