The world-famous cocktail consists of a white peach pulp base and brut sparkling wine. It was invented in 1948 by Giuseppe Cipriani of Harry's Bar in Venice and served in every Cipriani location around the world.

The war had just ended. In the streets and the air, the tension of the years of oppression could still be felt yet a newfound freedom was welcome as a daily celebration. Giuseppe Cipriani had an epiphany to dedicate a cocktail to peace when he was in his Harry’s Bar, a place that had only opened its doors seventeen years prior. He created a fresh drink with peach flavoured sweet notes whose pulp became the main ingredient. When an exhibition dedicated to Giovanni Bellini was being held at the Doge’s Palace in St. Mark’s Square, Giuseppe Cipriani saw assonance between the chromatic texture and the idea behind his cocktail, leading to the creation of The Bellini.
