Olive Vermouth is our answer to the perfect vermouth for a dirty martini. Castelvetranos are indisputably the best, so we infused heaps of those, and used their brine to kick it up a notch. Fresh thyme, oregano, and rosemary give an herbal note, with dill seed helping to amplify the brininess. We finished it off with a quick infusion of Kombu, a type of seaweed known for amplifying flavors and adding umami, to round out the flavors and help the savoriness of the olives really pop.
Naturally, we were inspired by dirty martinis for this vermouth.
