Its fine nose is expressive with aromas of apricot and honey on elegant layers of tropical fruit and citrus, all amplified by scents of nuts and vanilla. Rich in texture, this stylish aromatic wine is delicately balanced by a refreshing palate that leads into a complex finish.
Ovilos White matches well with firm fish on the grill, seafood risotto, sushi, turkey and other poultry, and cheese soufflé.
Ovilos White is a most exciting blend of two grape varieties, Assyrtiko and Semillon, grown in the warmest but most barren spot in the Estate’s vineyard located on the slopes of Mount Pangeon. The Semillon’s fragrant expression and ageing ability are complemented by the strength, structure and exceptional freshness of the Assyrtiko. After a brief maceration period on the skins, the wine is fermented in French oak and left in contact with the lees in barrel for a few months to add structure and complexity. This dry white wine eyes bright yellow with light green hues. It is ideally enjoyed at 12°C and can be aged for 10 years or longer.
In a heavy glass bottle with gold lettering, this is a blend of equal parts Semillon and Assyrtiko. No malolactic fermentation takes place, but this organic wine completes its primary fermentation in French oak. It is aged on the lees in barrel. The Biblia Chora 2023 Ovilos White is a balanced wine with good freshness, citrusy flavors, white peach and crushed rock. Ovilos offers a great sense of density and firmness that bodes well for the near- and medium-term aging potential of this bottle (with 40,000 units made).
