The Champagne presents itself with an attractive robe with a fairly fluid and luminous appearance, raspberry pink with pale orange-pink highlights. It is animated by fine and lively bubbles which crown a bright disk. The visual sensation announces a fresh and nuanced wine.

The first nose evokes scents of strawberry, raspberry, redcurrant, lemon, coriander, mixed with aromas of linden, fresh rose, violet. Aeration of the wine reveals spicy scents of Timut berry, pink grapefruit, apple, pear, clementine, orange marmalade.

The approach in the palate is supple and fresh with a creamy and melted effervescence. The Champagne develops a pulpy fruity substance supported by a pomelo acidity delivering a zesty sensation which imparts a hint of fresh and pleasant bitterness. The mid-palate is orchestrated by a well-integrated clay-limestone minerality that caresses the entire palate and tongue with delicacy, elegance, and slight roughness. This homogeneous and pulpy ensemble gains a seductive finish through its freshness and the pulpy precision of its fruity aromas. The final sensation of sensual freshness brings to a close a pleasant and sincere tasting.

The Pinot Meunier grape variety thrives on the climate at Domaine Salmon. It draws its strength from the harsh winters and its fruity flavors from the humidity of its springs. Our clay-limestone soil brings minerality to the grapes. At harvest time, its large, black, white-fleshed grapes are magnificent. They offer the palate delicious nuances that give this champagne its dense color and its light yet deep flavor notes.

We were keen to harness these qualities by choosing to dedicate 85% of our estate to Pinot Meunier. Less well-known than Chardonnay and Pinot Noir, it is gradually gaining recognition among connoisseurs. The only grape variety almost exclusively from Champagne, Pinot Meunier gives Champagne its authenticity and fully expresses its regional personality. This decision is now bearing fruit with our 100% Pinot Meunier collection.
