This Sauvignon Blanc is pale yellow with green reflections and a concentrated nose of lemon and exotic fruits. Elegant and aromatic, the palate delivers a lengthy finish tinged with spice. Ideal for appetizers, this is the perfect wine to open your palate, serving as a great match for soft cheeses–particularly goat cheese which is a specialty of the Loire region–summertime salads, seafood and grilled meats.
The vineyards that form the appellation of Touraine center around the city of Tours and border the Loire River, stretching from the Sologne region to the edge of Vienne and Anjou. Pioneers in sustainable farming, the Chainier family were among the first to employ green practices in the area. Minimal weeding of the roots and regular scrutiny of the vines keep treatments to a minimum.
Crafted in a traditional approach, grapes underwent a cold fermentation that took place in stainless steel tanks at a monitored temperature. At the end of alcoholic fermentation, wines were racked in order to remove the biggest part of lees and were left to mature on fine lees for one to three months in the cellar.
