Domaine Sigalas Description

Grapes are harvested by hand from the vineyards. They spend a night in a refrigerator at cold temperatures. Next day whole-cluster sorting and pressing. Cold maceration at low temperatures for 1-2 days, then the must is transferred into the stainless steel where fermentation takes place.

The wine remains on the lees for 18 months in the tank and is bottled 2 years after the grapes were harvested.

The vines are classified as old vines, over 50 years in age. The soil of Santorini is unique, the whole island is a super volcano and has been covered with volcanic material since the last eruption in 1620 B.C. Kavalieros is one of the best vineyard blocks located in the town Imerovigli on the island of Santorini, offering an exquisite Assyrtiko with exceptional characteristics.

Wine Advocate: 93 Points

The 2018 Kavalieros is all unoaked Assyrtiko, dry (2.8 grams of residual sugar and 6.4 of total acidity) and coming in at 14.5% alcohol. This is a single-vineyard Assyrtiko whose name means "on top," meaning that the winery believes this vineyard in Imerovigli is one of the best vineyards in one of the best sub-appellations. Textured, ripe and yet gorgeously structured—never seeming overripe!—this has a long finish and seems full-bodied. It coats the palate. It's dry and serious, with the acidity controlled but with enough left to keep the big fruit fresh. It might be lacking a bit of focus this year, but it shows well. It certainly benefits from the extra year of development it acquired as a later release. The price has gotten pricey, but this is one of the island's great labels these days. This does better than the regular Sigalas Santorini this issue for drinking now, thanks to the late release. Expect it to age well, although it is drinking pretty well now.
