Domaine de la Cornasse Description

Domaine De La Cornasse is located in Beines just four miles northwest of the town of Chablis . The winery was started by the Geoffroy family in 1850. Alain Geoffroy is a larger than life Burgundian personality and known throughout Chablis for the largest collection of vineyard antiquities. Today the winery is operated by Alain’s daughters Cathy & Natalie. The Cornasse vineyards were actually left to the daughters by their mother...keeping alive the tradition of this all-female influenced wine. We love their hands-off winemaking approach by focusing on growing and producing quality Chardonnay fruit. Soil: Chablis AOC benefits from a line of chalky clay Kimmeridgian soil that descends from the White Cliffs of Dover in England and pops up in the regions of Chablis and father south in Sancerre. These ancient soils composed of shellfish, fish skeletons and oyster shells— show where the Atlantic Ocean use to reside. Vineyards: Nestled near the Beauroy Premier Cru appellation, Cornasse’ Chablis AOC vineyards benefit from favorable southern sun exposure above the Ru de Beine River. Weather shifts are common in Chablis and the Lac de Beine plays an important role as winemakers typically draw on this water source in spraying the vines just before frosts to add an insulation blanket of ice. 50% of the Chardonnay comes from a Kimmmeridgian hillside that is hand harvested and the other 50% comes from a sunny plain to showcase the fruit of Chablis.
