60% Pinot Noir, 40% Gamay
This rosé is obtained by direct pressing of the entire harvest. As with the white wine, the musts from the first pressings are cold decanted for 48 to 72 hours. Then, alcoholic fermentation takes place in temperature-controlled vats. In order to offer a rosé from the first fine days, this cuvée is bottled in mid-February, after 3 months of aging on lees and fining.
The “Les Beaux Jours” wines are produced on the clay-siliceous hillsides (limestone subsoil) along the Loire in Bonny and Beaulieu, in the heart of the Coteaux du Giennois appellation. The grapes, mostly harvested by hand, are vinified entirely in vats, in order to preserve the maximum of their aromatic potential, as well as their freshness.
