The Marchesi Incisa della Rocchetta Grignolino d'Asti appears a clear and bright ruby red color in the glass. The nose reveals aromas of strawberry and rose, with spicy notes (white pepper). The palat eis light-bodied and structured with fine tannins, persistent with an elegant finish.
Despite the light color, but thanks to its tannic structure, Grignolino is a very good match for a wide range of dishes: from pasta dishes with tomato sauces, pizzas, light cheeses and charcuteries to grilled meats and fish, vegetarian dishes, sushi and Asian cuisine in general. It can be served chilled and enjoyed as an ideal summer wine.
Grignolino shows its best qualitative expression just a few months after bottling, keeping it for about 3 years. While ageing in the bottle, it develops spicy notes such as white pepper.
Our Grignolino grapes come from “Garbera” vineyard situated in a prominent position on the hills surrounding the village of Rocchetta Tanaro in Monferrato. During the growing phases we perform green harvests and cluster selections in order to ensure optimal ripening of the grapes.
The grapes are destemmed and softly pressed. Maceration lasts just a few days in order to reduce tannin extraction. The alcoholic fermentation takes place in stainless steel vats at a controlled temperature. The malolactic fermentation occurs spontaneously or is induced at a controlled temperature.
