Notes of orange peel, dried tangerine, and ripe pear mingle with hints of anise, ginger, and savory herbs. Accents of dried flowers and a meditative earthiness lend depth and character. This is a more concentrated, textured, and contemplative expression of Coenobium, one that stands up beautifully to richer, heartier dishes.
A blend of the same four grapes (Trebbiano, Malvasia, Verdicchio and Grechetto) but, in this instance, the juice is left to ferment on the lees for a period of two weeks or more, extracting all of the flavors, colors and textures of its fruit. There are approximately 4,000 bottles produced annually of this cuvée, the overwhelming majority of which comes to the USA.
The Cistercian order of nuns at Monastero Suore Cistercensi, in Lazio, planted their vineyard in 1963, but it wasn’t until the early 2000's that their wines began to attract more attention, largely due to their employment of the noted winemaking consultant, Giampiero Bea, son and successor to the celebrated Paolo Bea. The wines share Bea's rare combination of wildness and elegance. They are unique, fun and playful, while still showing off serious skill as well as the viticultural heritage of southern Italy.
