A beautiful pink foam and a very fruity aroma with dark berries and fresh strawberries. The palate is full, with nice acid that balances out the fruit with a refreshing and persistent finish. Makes an excellent and interesting addition to charcuterie and cheese plates.

Fermentation occurs in stainless steel tanks. After the second fermentation in bottle the wine is aged in cellars on the yeast for a 16 months to find the perfect balance of weight and flavor. The bottle then undergoes remuage for 2 months before disgorging glacée releases the yeast and then a small amount of expedition liqueur is added to finish the wine. The finished wine is held 2 months before market release.
