Aromatically this wine is complex, with layers of rose petals, white flowers, dried stone fruits, white pepper, fresh herbs, and honey-ed cream. On the palate the wine is full bodied and intense, with notes of dried apricots, candied citrus fruits, and a bracing flinty-ness.
This bottle of 100% Pinot Grigios hails from grapes off of Scarbolo's oldest single vineyard site 'Mattia'. These vines are trained using the Guyot method and the grapes are carefully hand harvested and hand sorted. 50% of fruit is destemmed and left on skins for 4 days of maceration. Gentle pressing, followed by fermentation, 30% in 500 L oak barrels and 70% stainless steel. The other 50% of fruit is destemmed and left on skins for 2 days of cold maceration, then transferred to stainless steel for fermentation. Wine is aged for 18 months on noble lees with frequent bâttonage. Bottled aged for 6 months. The product is beautifully cooper, extremely complex orange wine.
