It is a wine crafted under the Clarete method, arising from the fermentation of red and white grapes, the latter in smaller proportion. Composed of 80% Malbec and 20% Torrontés, it is a wine with a light color and a strong aromatic impact reminiscent of red fruits, with floral notes characteristic of Torrontés. On the palate, the natural acidity stands out, providing a very particular liveliness to accompany paellas, spiced dishes, pastas, and even vegetables.
Santa Julia La Vaquita is the first Organic and Natural wine from Bodega Santa Julia and reflects our mission to develop wines in an organic and sustainable way, coexisting with the environment instead of attacking it. It represents the maximum expression of the variety and its surroundings. Allowing us to enjoy its potential in a more natural way.
Varietal: 80% Malbec, 20% Torrontes (100% Organic)
The grapes come from certified organic vineyards where environmentally friendly practices are carried out. During its production, no external agents are added that could mask the expression of the grape variety, such as tartaric and citric acid to correct acidity or sulfur dioxide for stabilization. The must macerates for 10 days and both grapes (Malbec and Torrontés) co-ferment with the whole grains without adding commercial yeasts, with the native yeasts being responsible for carrying out this process. At the end, the wine obtained is bottled without clarifying or filtering which explains its slight turbidity..
