A clear lemon color of medium intensity. Expressive flowery aromas of jasmine on the nose, along with citrus and green fruits, such as green apple and pear on a vanilla background. On the palate it is dry, with crispy-refreshing acidity, in great balance with the delicate floral and fruity flavors. Just an elegant touch of oak, contributes to the overall balance. Long and pleasant aftertaste.
Traditionally Assyrtiko and a dash of Aidani and Athiri grapes were pressed the night after their harvest in order to give the famous Nykteri (stands for staying up all night) wine.
85% Assyrtiko, 10% Athiri, 5% Aidani from vines averaging 80 years of age in Oia and Megalochori. Aged for 6 months in 5t French oak vats.
The Santo Wines 2023 Santorini Nykteri is a blend of 85% Assyrtiko, 10% Aidani and 5% Athiri that ferments in stainless steel and is then moved over to larger oak barrels for six months. The wine offers a brief floral component of peach blossom, honeysuckle and tropical plumeria from the two aromatic grapes (Aidani and Athiri), but the saltiness, the structure and the staying power come from the Assyrtiko. It also offers toasted oats and almond. There is a tiny touch of residual sugar (just two to three grams per liter) that helps to flesh it out over the palate. Anticipated Maturity: 2025-2035
