Aging for 2-3 years in oak barrels gives the Cascina del Monastero Langhe Nebbiolo its characteristic intense ruby red color, in addition to floral aromas that reveal fruity hints of nectarine and licorice. On the nose, the wine is pleasantly balanced. On the palate, it is enveloping, with a good depth, supported by a good acidity that makes it particularly inviting. It evokes a touch of rusticity that does not interfere with the elegance. This makes it a good pairing with both simple and rich dishes. The dry, tannic, and well-structured flavor masks a moderate acidity, making it a particularly good match with red meats, including wild game, and aged cheeses.
It's always been said to be Barolo's little brother, but in reality it's the father of all the great Piedmontese reds, finding its natural habitat in these hills. Its name derives from "nebbia" (mist), precisely because its grapes give the impression of being "clouded," covered in abundant bloom; others say it's from the late ripening of the grapes, which pushes the harvest to the first autumn mists.
